Yellow raspberries are a rare treat - sweet, floral, and mellow, without the sharpness of their red cousins. We grow the All Gold variety, and while the harvest is always small, it’s one of the most precious of the season. Picked at peak ripeness in the early morning, they hold all the softness of summer.
The inspiration for this cordial came after Anthony’s recent trip to Colombia, where cacao and raw cane sugar are part of everyday food culture - from panela drinks in the mountains to cacao nibs stirred into fruit preserves. That deep, earthy richness of unprocessed cacao stayed with him.
To these mellow raspberries, we’ve added raw organic cacao nibs sourced through our neighbours at Bean & Goose Chocolate, along with a touch of our own homemade organic bitter orange syrup - just enough to lift and amplify cacao’s naturally spiced, citrusy edge. It’s all rounded out with organic Verna lemons from our adopted trees in Spain (through the CrowdFarming platform), and a pinch of Wexford Sea Salt to bring everything into balance.
This is a grown-up cordial - complex, subtle, and best enjoyed slowly. Mix with sparkling water, soda, or Cava, or add a splash of gin for a summer spritz. It’s also beautiful over ice cream, or swirled into whipped cream or yoghurt to serve with some pudding.
Presented in a glass cork bottle, on its own or wrapped in illustrated paper that tells the Wexford and Irish food story, and elegantly packaged in our signature black box.
