A place to pause, to breathe, and—most importantly—to grow, cook, and eat.

Over time, Fat Tomato will become an edible landscape of old and new Irish flavours, shaped by seasons, curiosity, and care.

MORE THAN A GARDEN

Fat Tomato is imagined as a place where food lovers, gardeners, farmers, producers, chefs, artists, designers, writers, and other creatives can come together — to share ideas, swap stories, and recharge.

You never quite know who you might meet, what conversations might unfold, or where an idea could lead.

The space will be shaped by curiosity, biodiversity, and flavour, reflecting Anthony’s work as a connector across food, hospitality, tourism, and design.

It will also celebrate Irish craft and design, quietly informed by Anthony’s love of travel through landscape, architecture, and cultural influence.

The Plan

Anthony has been quietly working towards his dream home for years — researching, exploring, and gathering ideas, garden seeds, and meaningful craft along the way.

As they say, good things take time.

The journey began in 2016 with an edible garden behind his parents’ home. What started with a single polytunnel, a handful of organic seeds, and a compost heap grew into a chef-driven garden project — and the beginnings of something much bigger.

For a long time, Anthony has dreamed of creating a place that brings together his love of food, drink, travel, and design — a space where old friends, new connections, family, collaborators, and curious visitors can gather.

The search is now underway for the right piece of land in the south-east — full of character — to become the next home of Fat Tomato.
