A proper Christmas pudding is something to look forward to — made slowly, shared generously, and rooted in tradition. For Christmas 2026, we are offering our Damson Whiskey Pudding, first created in 2025 and matured for a full year before release.

Handcrafted in small batches, this is a pudding shaped by time, patience, and the best of the season — a centrepiece for the Christmas table.

The Damson Whiskey Pudding

The 2025 Release · Matured for One Year

Dark, fruity, and unmistakably Fat Tomato, this pudding begins in the garden.

Our Merryweather damsons are poached, dried, and macerated for months in Tara Hill raw blossom honey and Boann Distillery Single Pot Still PX Cask Irish Whiskey, creating a fruit base that is intensely aromatic and full of depth.

From there, layers build slowly: St. Brigid’s Ale adds a warm, malty backbone; Salt Rock Dairy cultured butter and Plúr Bakery’s heritage-grain sourdough crumbs bring richness and structure; organic pecans and almonds add texture; while our own candied citrus — made from organic fruit grown on our adopted trees in Spain — lifts and balances the darker notes.

Highbank Orchards’ organic apple treacle and a blend of orchard and vine fruits — organic figs, cranberries, and currants — complete the mix, creating a pudding that is generous, layered, and deeply flavoured.

Steamed low and slow, then rested for a full year, this is a pudding made to be savoured — rich, complex, and quietly luxurious.

Perfect pairing: Serve warm, in generous slices. We love it paired with Organic Cashel Blue or Mount Leinster raw milk cheddar — its creamy tang cutting beautifully through the pudding’s rich sweetness. Add a glass of Tawny Port or PX Sherry for a proper finish.

  • For the perfect Christmas moment, gently steam your pudding for 2 hours, then serve it in warm bowls with a generous spoonful of Salt Rock Dairy brandy butter melting over the top.

    For a classic flourish, flame it at the table with a splash of whiskey or brandy, then pair it with softly whipped cream, custard, or vanilla ice cream.

    The included Irish farmhouse cheese offers a beautiful savoury contrast. Perfect to serve the pudding as is in small wedges with some cheese on top.

    For something lighter, serve with natural yoghurt or crème fraîche, or enjoy with a glass of Tawny Port, PX Sherry, Irish apple brandy, or Boann’s PX whiskey.

    Any leftovers are a joy the next day: slice cold and fry in butter until crisp at the edges, or crumble over porridge or ice cream for a festive treat.
