At Fat Tomato, we grow a wide range of courgettes, sowing in succession so we can harvest right through to late autumn. Their golden-yellow flowers brighten the garden and attract a host of pollinators. Some courgettes are left to mature into marrows — both for seed saving and for preserving.
When cooked slowly, marrow absorbs flavour beautifully. For this chutney, we use Cocozelle and White Volunteer marrows alongside our heritage tomatoes (we grow over 100 varieties each year), Bramley apples, and sweet Radar onions — all balanced with our own heritage apple cider vinegar and organic raw cane sugar from Colombia, one of the most biodiverse countries in the world.
The sweetness comes naturally from organic Deglet Nour dates, adding a honeyed depth and a soft, velvety texture.
Gently spiced with wild alexander seeds, organic Indian yellow mustard seeds, Mexican allspice, Peruvian ginger root, and our own heritage garlic, this is a richly layered chutney that captures the warmth and abundance of late summer.
Like fine wine, chutneys only get better with age. Left to mature in our pantry for months before finding new homes, the vinegar and spices mellow into a complex, balanced condiment that shines on any table.
Serve with farmhouse cheeses, cold meats, roast dishes, or in sandwiches. A natural companion to cheddar and a welcome addition to a full Irish breakfast.
