Pink Banana squash loves warmth, space, and rich soil. Sow seeds indoors into small pots using peat-free organic potting compost, keeping temperatures at 20°C or above for good germination. Sow seeds point-side down, about 1.5-2cm deep, and keep evenly moist.
Grow plants on in good light, then harden off and plant out after all risk of frost has passed. Choose a sunny, sheltered spot with fertile, well-drained soil, spacing plants 90-120cm apart. Allow vines plenty of room to trail and water well during dry periods.
Sow indoors: April to early June
Plant out: Late May to July
Harvesting time: September to October

Pink Banana squash is prized for its sweet flavour and firm, floury texture, making it especially good for baking. It roasts beautifully in wedges and works well in soups, stews, curries, and warm savoury dishes, holding its shape and richness as it cooks.
The natural sweetness also shines in desserts. We love using it in an old-fashioned pumpkin pie, sweetened with Highbank Orchard organic apple syrup from Kilkenny instead of maple syrup. Once cooked, the flesh also freezes well for winter baking and cooking.
