Rumex sanguineus

A striking and flavourful perennial leaf, Red Veined Sorrel is grown for its vibrant green leaves marked with deep red veins and its bright, lemony sharpness.

Used across European kitchens for generations, it brings freshness and acidity to dishes — cutting through richness and lifting simple ingredients. Tender leaves can be picked regularly, encouraging fresh growth throughout the season.

In the kitchen, it’s incredibly versatile. Use young leaves fresh in salads, scattered over finished dishes, or as a sharp, colourful garnish. It works beautifully wilted into sauces, soups, and egg dishes, and pairs especially well with fish, potatoes, and creamy ingredients.

  • Red veined sorrel is easy to grow and thrives in sun or partial shade in moist, well-drained soil. Sow seeds into pots or modules using peat-free seed compost and keep moist.

Germination is usually quick, but plants can be slow to establish at first. Grow on and plant out once established, or sow direct in warmer conditions.

  • Red veined sorrel brings a bright, lemony sharpness that lifts and balances dishes. Use young leaves fresh in salads or as a garnish, where their colour and acidity really stand out.

It’s excellent gently wilted into sauces, soups, and egg dishes — especially with butter, cream, or soft cheeses, where its acidity cuts through richness. It pairs particularly well with fish, potatoes, and spring vegetables.

Add towards the end of cooking to preserve its freshness, as the flavour softens quickly with heat.

For the best flavour and texture, harvest leaves young and tender.
