Phaseolus vulgaris

Autumn Zebra is a beautiful, flavourful heritage pole (climbing) bean, prized for both its striking looks and rich taste. The long pods are green with bold purple zebra-like striping, while the beans inside mature to a cream colour mottled with brown, similar to Borlotto types.

Sometimes nicknamed the ‘seaweed bean’ - a reference used by growers and cooks - Autumn Zebra is celebrated for its subtle umami richness when cooked, reminiscent of kombu or dried seaweed. Chefs love it for brothy dishes and slow cooking; we especially enjoy the dried beans simmered into a deep, savoury bean broth with greens, olive oil, and herbs. Vigorous climbing plants crop generously over a long season, with pods harvested young as green beans or left to mature for shelling and drying.

Average number of seeds: 20

Open-pollinated, chemical-free seeds. Grown and saved in Wexford, Ireland. We only grow and save seeds from plants that were started from certified organic seeds.

Each seed packet includes growing tips and cooking suggestions inside.

  • Autumn Zebra is a climbing bean that loves warmth and sunshine. Sow seeds directly outdoors once the soil has warmed, or start indoors in small pots using peat-free organic compost. Sow seeds 3-4 cm deep.

Plant out after all risk of frost has passed in a sunny, sheltered spot. Provide strong supports such as canes, teepees, or netting. Water regularly, especially during flowering, and harvest often to encourage continued cropping.

    Sow: May to June

Plant out: Late May to June

    Harvesting time: July to October

  • Autumn Zebra beans are prized for their silky texture and savoury depth. Pick pods young and cook like green beans - lightly steamed, blanched, or sautéed with extra virgin olive oil and garlic to highlight their subtle umami notes.

Allow pods to fully mature for shelling or drying. The dried beans are delicious in soups, stews, and slow-cooked dishes. We love simmering them into a deep, savoury bean broth with greens, fresh herbs, and good olive oil - simple, nourishing, and full of flavour.
