A taste of the Irish hedgerow, slowly captured in a jar.

Autumn brings a different kind of harvest to the garden. Beyond the beds and polytunnel, the hedgerows begin to fill with blackberries, bullaces, haws, elderberries, rosehips and sloes, while the orchard gives us crabapples and heritage apples.

Our Hedgerow Butter brings those harvests together. Wild hedgerow fruits are slowly cooked with crabapples, Bramley and Blood of the Boyne apples until the fruit becomes naturally thick, smooth and intensely flavoured. Despite the name, a fruit butter contains no butter – it is an old-style preserve in which fruit is cooked slowly for hours, concentrating its flavour and creating a rich, velvety texture.

Organic Verna lemons from our adopted trees along the Mediterranean bring brightness, while star anise, clove and a little Wexford sea salt add warmth and complexity without overpowering the fruit.

The result is silky, deeply fruity and full of the flavours of the hedgerow – bright and floral, with gentle spice and a natural tartness running through it.

Spread generously on warm toast, spoon over porridge or yoghurt, serve with farmhouse cheeses, or pair with roast pork, duck, venison and other game.
