Damson Apple Gin Jam

One of the first fruit trees planted in our garden was a Merryweather damson — a variety once widely grown and loved across Ireland and the UK. Some consider it closer to a plum due to its generous size, but for us, it is unmistakably a damson: blue-black skin with a soft bloom, greenish-yellow flesh, and that distinctive astringent bite that defines its character.

Our damsons are grown for flavour, not yield. Each season, we preserve them in different ways — jams, cordials, syrups, umeboshi-style pickles, and even a Christmas plum pudding — but they are perhaps most famously paired with gin. Mention damsons to anyone in the drinks trade, and damson gin is the first thing to spark excitement.

That connection inspired this jam. We pair our damsons with organic apple gin from Highbank Orchards in Kilkenny — a beautifully crafted spirit distilled entirely from apples. The alcohol cooks off, leaving behind delicate notes of juniper, orchard fruit, and soft botanicals woven through the damsons’ sweet-sour depth.

Rich, fruit-forward, and gently lifted with a botanical finish, this is a jam that moves easily between sweet and savoury. Spread generously on toast, warm scones, or buttermilk pancakes. Pair with clotted cream, aged cheeses, or use as a glaze for pork, venison, or game. It’s equally good spooned into yoghurt or folded through cream for simple desserts.

  • We like our jams slightly runny, allowing the fruit flavour to shine. Spread thickly on sourdough toast, brown bread, or warm scones with plenty of salted butter. Spoon over morning yoghurt with granola, drizzle on vanilla ice cream, or layer into a Victoria sponge with cream.

    It’s also delicious with buttermilk pancakes, clotted cream, or aged cheeses — and makes a beautiful glaze for pork, venison, or game. We can keep going!
