To this, we add layers of flavour from garden spices, our oak-aged apple cider vinegar, a touch of aged organic key lime pickle (based on a Madhur Jaffrey recipe), and organic apple syrup from our friends at Highbank Orchards in Kilkenny.
Nigella sativa — also known as black cumin, black caraway, kalonji, or black onion seed — is the star of this chutney. Aromatic and complex, it brings hints of onion, oregano, black pepper, and nutmeg-like warmth. Native to Asia and the Middle East, it is a close relative of Nigella damascena (“Love in a Mist”), a flower once common in Irish cottage gardens. While N. damascena is grown for its delicate blue blossoms, N. sativa is treasured for its distinctive flavourful seeds.
The Gibbons Russet apple, preserved today by Irish Seed Savers, has been grown for cider in Kilkenny, Cork, and Meath since the 19th century. Its sweet-tangy flavour and russet-streaked skin bring body and balance to the chutney. The Osteen mangoes contribute rich, tropical sweetness and the lush, syrupy texture that defines a true mango chutney. We source them through CrowdFarming, a platform that connects us directly with small Mediterranean farmers — many second- and third-generation — who continue to cultivate organically and traditionally.
Our aged key lime pickle ties it all together, adding tangy citrus, savoury depth, and a subtle fermented note that lifts the mangoes and apples into harmony. Bold and layered, this chutney is perfect with curries, grilled meats, sharp cheeses, or even stirred into yoghurt as a quick dip.
