We love bay leaves at Fat Tomato. A couple of bay laurel trees grow around the garden, as we can never have enough. If you have ever attended one of Anthony’s spectacular events, he always has some on display. The colour and fragrance add to the overall story of his events. They have been at events across Ireland, on boats to France and Spain, and flights to Lanzarote and New York!

The flavour and aroma of bay laurel leaves vary between the fresh and dried forms. While fresh bay leaves have a notably bitter taste and pungent smell, dried bay leaves take on more herbal notes reminiscent of thyme and oregano. Unlike most dried bay leaves sitting on shelves in food stores and supermarkets, ours are fresh and dried naturally. We pick them as needed, keeping as much aroma and flavour as possible.

Biodiversity is very important to us. We do not use any chemicals or artificial fertilizers in our garden. We make our own organic compost, which only enhances the flavour of everything we grow and harvest.

  • Bay is a versatile spice in many European, Asian, and South American dishes. It is used in marinades for meat and fish, added to boiling water to cook shellfish like crab and shrimp, and in pickling solutions. You will also find them swimming in soups, stews and casseroles as they give them beautiful savoury notes.

    We love boiling our ham for sandwiches with bay, yellow onions, and black peppercorns. Add some to the roasting tray when making those delicious Sunday roast potatoes. During the wintertime, we add some to creamy rice pudding, as it gives it a subtle herby flavour.

  • Store in a cool, dark place. Use within one year. Ideally, within 6 months as the flavour diminishes.
