Yellow Raspberry Cacao Fizz

Fat Tomato’s cordials are versatile in every sense. Drizzle them over porridge, swirl into thick natural yoghurt (we’re big fans of Killowen, Salt Rock Dairy, Mossfield, and Velvet Cloud), or pour over a scoop of vanilla ice cream - Scúp Gelato is our go-to.
They also shine in drinks, from simple spritzers to standout cocktails. This particular recipe highlights the bright, juicy tang of our Yellow Raspberry Cacao Cordial - made with All Gold yellow raspberries from our garden, organic Ecuadorian cacao (sourced through our neighbours at Bean and Goose Chocolate), organic raw cane sugar from Colombia, and sweet oranges from our adopted trees in Spain. A pinch of Wexford sea salt brings it all together, gently lifting the natural flavour of the fruit.
Light, playful, and summery, it’s ideal for long sunny afternoons or as a welcome drink at a dinner party. The chocolate note is subtle but adds a lovely depth. It works beautifully with Irish gin or vodka - or for a bubbly version, try cava or crémant. And of course, it’s just as delicious alcohol-free, served with still or sparkling water, or with tonic or soda water - we love Poachers.
Serves - 1 cocktail
Ingredients
25ml Yellow Raspberry Cacao Cordial
10ml fresh lemon juice (organic, unwaxed)
30ml of your favourite Irish gin or vodka
Lemon twist or fresh raspberries, to garnish
Tonic, soda, or sparkling water
Ice
Instructions
Grab a cocktail shaker.
Add the cordial, lemon juice, and gin or vodka.
Add ice and shake well.
Strain into a chilled cocktail glass and top up with tonic, soda, or just sparkling water.
Garnish with a twist of lemon peel or a couple of fresh raspberries. If you can find them, the yellow ones are delicious, but the red ones look fabulous too.
Serve immediately - and repeat as needed. It’s that kind of drink.
If you're trying the bubbly version, grab a fancy glass and pour in around 10ml of the cordial, then slowly top up with chilled cava or crémant. Give it a gentle stir with a teaspoon if needed. Garnish as you like - lemon peel, fresh berries, or nothing at all. Sip and enjoy the sparkle.
