In the interview, Anthony shares the story behind Fat Tomato, from starting with a handful of seeds in a small Wexford garden to growing over 500 organic heritage varieties, crafting flavour-packed condiments and drinks, and running one of Ireland’s most stylish Honesty Farm Shops.

He reflects on his global journey as a chef, writer, and food culture specialist, and how it led him home to create a garden rooted in flavour, biodiversity, and curiosity. What began as a personal growing project in 2016 has blossomed into a vibrant space for seasonal produce, heritage seeds, and small-batch preserves.

Anthony also discusses the importance of biodiversity, seed-saving, and local food systems, and how Fat Tomato is helping to build a future grounded in good food, shared knowledge, and seasonal joy.
