Anthony to speak at the UN Chefs’ Manifesto gathering in London
Later this month, Anthony will join a panel of international chefs, growers, and food activists at the Chefs’ Manifesto London Action Hub - a United Nations gathering exploring the power of seeds, storytelling, and food culture to drive systems change.
Taking place at the biodiverse haven of OmVed Gardens in North London, the panel titled “Growing Power: Seeding a Good Food for All Future” brings together voices from Ireland, Kenya, Peru, and the UK to spotlight how food can be a force for resilience and regeneration.
Anthony will speak about the origins and vision of Fat Tomato, sharing how a seed-led approach to growing has created a one-of-a-kind edible garden rooted in biodiversity, curiosity, and flavour. He’ll highlight how food can serve as a tool for education, preservation, and positive change - particularly when it celebrates heritage varieties, sustainable practices, and local culture.
A chef and slow food advocate, Anthony has been a member of the Chefs’ Manifesto community since its formation and has attended the London Action Hub over the past few years. He’s looking forward to returning to represent Ireland and share the story of Fat Tomato on an international stage.
The event is part of a wider two-day programme focused on reimagining food systems for human and planetary health.
