








Wild Elderflower Cordial
Elderflowers mark the start of summer in the garden - delicate, fleeting, and richly fragrant. We gather them wild, early in the morning when their scent is strongest, from hedgerows that are never sprayed and well away from busy roads. Our neighbours often jump in to help too – it’s one of the most nostalgic and joyful harvests of the season.
Our wild elderflower cordial is stronger and more fragrant than most commercial versions - made the old-fashioned way, with no shortcuts and no artificial ingredients. Just wild elderflowers, organic citrus from our adopted lemon and orange trees in Spain through the CrowdFarming platform, and raw organic cane sugar sourced from Colombia – one of the most biodiverse countries in the world. A pinch of Wexford Sea Salt brings it all into balance and lets the floral notes shine.
We don’t use citric acid or artificial preservatives - just real ingredients, steeped slowly and bottled by hand. The result is light, floral, and quietly complex – a true taste of early summer.
Mix with still, sparkling, or Poachers soda water (1 part cordial to 6–8 parts water) for a refreshing drink. Add to cocktails, stir into a G&T, or drizzle over Madeira cake, berries, yoghurt, or ice cream for a special treat.
