Every autumn, we save the seeds from our best pumpkins and squash - Rouge Vif d’Étampes, Pink Banana, and other heirloom varieties we grow for flavour, not yield. The seeds are dried, germination-tested, packed, and sown the following summer again, a quiet cycle of seed stewardship that keeps our garden - and this chutney - rooted in tradition.
Our Sweet Pumpkin Chutney begins with these homegrown pumpkins and squashes, roasted slowly to bring out their natural caramel sweetness. We combine them with our Bramley and Blood of the Boyne apples, Highbank Orchards organic apple syrup, organic cranberries and apricots, and our own heritage apple cider vinegar.
It’s gently layered with warm spices, organic black mustard seed, cumin, green cardamom, cinnamon, fresh Peruvian turmeric root, and wild Alexander seeds gathered from the Wexford hedgerows, creating a glossy, golden chutney that’s mellow, aromatic, and quietly complex. Less sharp than a traditional pickle, more rounded, sweet, and fruit-forward.
It’s the chutney we reach for all year long: spooned onto warm dahl, served with curries, paired with roast vegetables, or layered into the ultimate sandwich. It’s equally brilliant with Sunday lunches, buttery mash and pork sausages, melted cheddar on sourdough, or stirred through warm grains and squash. And come December, it’s the one we always have with our Christmas turkey and ham.
