Sherbet is a flavour loved by almost everyone - sweet, tangy, and full of childhood memories. That first fizzy hit on the tongue brings us straight back to long afternoons and sticky fingers, to the simple joy of dipping a paper straw into a packet of sherbet powder with grandparents or friends.
Our Sherbet Cordial captures that same sparkle - the mouthwatering balance of sweet, sour, and salt - reimagined through flavours from our garden, wild hedgerows, and adopted citrus trees in Spain. It’s a little more savoury than most cordials, with a gentle pinch of Wexford Sea Salt to draw out the bright citrus and floral notes that make sherbet so addictive.
To capture this flavour, we use wild elderflowers gathered early in the summer from unsprayed Wexford hedgerows, when their scent is at its peak. To this we add organic Verna lemons and Valencia oranges from our adopted trees in Spain (sourced through the CrowdFarming platform), lemon verbena from our garden, and raw organic cane sugar from Colombia - one of the most biodiverse countries in the world.
Made the old-fashioned way, with no citric acid or artificial preservatives - only real ingredients, steeped slowly and bottled by hand - this cordial is bright, floral, and quietly complex. A grown-up take on a childhood favourite, it captures the unmistakable flavour of sherbet in its purest, most natural form.
Enjoy mixed with still, sparkling, or Poacher’s soda water for a refreshing drink. Add to cocktails, stir into a G&T, or drizzle over fruit, yoghurt, or ice cream for a burst of bottled sunshine.
Presented in a glass cork bottle, on its own or wrapped in illustrated paper that tells the Wexford and Irish food story, and elegantly packaged in our signature black box.
