The sweet, nutty flavour of the deep orange flesh shines in pumpkin pies and baked dishes. However, due to its high water content, we recommend puréeing and straining the flesh before baking.
It also works beautifully as roasted pumpkin wedges, in risotto, and makes an excellent soup. Traditionally, the shell was used in Europe as a soup tureen.
