The Damson Whiskey Pudding
The 2025 Release · Matured for One Year
Dark, fruity, and unmistakably Fat Tomato. This pudding celebrates the Fat Tomato garden and the very best of Irish craft. Made with our own Merryweather damsons - poached, dried, and macerated for months in Tara Hill blossom honey and Boann Distillery Single Pot Still PX Cask Irish Whiskey - it is intensely fruity, aromatic, and gently spiced.
St. Brigid’s Ale (brewed by sisters Judith and Susan Boyle in honour of the patron saint of beer) adds a warming malty backbone. Salt Rock cultured butter (made just 20 minutes up the road), Plúr Bakery’s heritage-grain organic sourdough crumbs, organic pecans and almonds, our own candied organic citrus from our adopted trees in Spain, and Highbank Orchards’ organic 100% apple treacle - along with a bounty of orchard and vine fruits including figs, cranberries, and currants - bring richness, texture, and depth.
Steamed low and slow, then rested for a full year before release, this is a pudding made to be savoured - generous, layered, and quietly luxurious.
Perfect pairing: A generous wedge of Organic Cashel Blue - its creamy tang cuts beautifully through the pudding’s rich, aged sweetness. Add a glass of Tawny Port or PX Sherry and sneak a slice at midnight… we won’t judge.
Limited Edition
Each pudding is:
Wrapped in festive John Louden cloth
Paired with Salt Rock Dairy’s farmhouse brandy butter (made just 20 minutes away)
Presented with a wedge of Irish farmhouse cheese
Accompanied by Anthony’s signature branded matches - a nod to the old Irish ritual of lighting the Christmas pudding
Packed in a beautiful black Fat Tomato gift box, lined with illustrated paper telling the Wexford and Irish food story
Each box also includes a note on how to store, serve, and reheat your pudding for the Christmas table.
