The Pud of Puds - Two different puddings. One very delicious Christmas.

Who can resist a proper Christmas plum pudding? This year, we’re offering two exceptional creations - each handcrafted in small batches, steeped in tradition, and brimming with the warmth and flavour of an Irish Christmas.

The Mature Plum Pudding (2-Year Aged)

A true Christmas treasure. This pudding began its journey in early 2023 and has been maturing slowly ever since, developing a depth and complexity that only time can create. Dark, glossy, and intensely aromatic, it’s rich with boozy organic fruits, tart Bramley apples from our garden, wild Irish hazelnuts, and warming organic spices.

Made with Drumderry Irish flour, Seagull Bakery sourdough crumbs, our own heritage hen eggs, and a medley of organic fruits macerated for months in Highbank Orchard’s organic apple brandy and Dungarvan Brewing Company’s aged Black Rock stout, it carries extraordinary character. Notes of candied Peregrine peach, Minnesota Midget melon, and Morello cherries from our garden weave through layers of organic nutmeg, cinnamon, clove, fennel, and ginger.

Perfect pairing: A generous wedge of Organic Cashel Blue - its creamy tang cuts beautifully through the pudding’s rich, aged sweetness. Add a glass of Tawny Port or PX Sherry and sneak a slice at midnight… we won’t judge.

The Damson Whiskey Pudding (2025 Release)

Dark, fruity, and unmistakably Fat Tomato. This year’s new pudding celebrates the Fat Tomato garden and the very best of Irish craft. Made with our own Merryweather damsons - poached, dried, and macerated in Tara Hill blossom honey and Boann Single Pot Still PX Cask Irish Whiskey for months - it is intensely fruity, aromatic, and gently spiced.

St. Brigid’s Ale, brewed by Judith and Susan Boyle in honour of the patron saint of beer, adds a warming malty backbone. Salt Rock cultured butter (made just 20 minutes up the road), Plúr Bakery’s heritage-grain organic sourdough crumbs, organic pecans and almonds, our own candied organic fruit from our adopted trees in Spain, Highbank Orchard’s organic 100% apple treacle, and a bounty of orchard and vine fruits - figs, cranberries, currants, and more - bring richness, texture, and depth. Steamed low and slow, then rested before release, this is a pudding made to be savoured.

Perfect pairing: A wedge of Coolattin 18-month Raw Milk Cheddar - nutty, clean, and bright. It complements the damsons and whiskey beautifully. Add a glass of Boann’s PX whiskey, an apple brandy, or simply a strong cup of tea at breakfast time.

  • For the perfect Christmas moment, gently steam your pudding for 2 hours and serve it in warmed bowls with a generous spoon of Salt Rock Dairy brandy butter melting over the top.

    For a classic flourish, flame it at the table with a splash of whiskey or brandy and pair with softly whipped cream, custard, or vanilla ice cream.

    The included Irish farmhouse cheese offers a beautiful savoury contrast - Organic Cashel Blue for the Mature Plum or Coolattin Cheddar for the Damson Whiskey.

    For something lighter, serve with natural yoghurt or crème fraîche, or enjoy with a glass of Tawny Port, PX Sherry, Irish apple brandy, or Boann’s PX whiskey.

    Any leftovers are a joy the next day: slice cold and fry in butter until crisp at the edges, or crumble over porridge or ice cream for a festive treat.

  • Store in a cool, dark place. Puddings last for years once made properly with good ingredients and steeped in alcohol like ours!
