The 2025 peach season is here.
The 2025 peach season has been kind to us - a warmish early spring allowed the blossoms to be pollinated, giving us a beautiful crop of big, juicy peaches bursting with flavour. Grown in our polytunnel, our Peregrine and Johnny Brack peach trees arch over the doorways, protected from the worst of the Irish weather.
Peregrine is one of the finest English varieties, producing fragrant white-fleshed fruit with crimson-blushed skins. Johnny Brack, a lesser-known variety, gives us golden peaches with a rounder, honeyed flavour that pairs beautifully with vanilla. These fruits don’t keep long, so we work quickly to capture their flavour at its peak.
This syrup is made with the two peach varieties, organic Colombian raw cane sugar, a pinch of Wexford sea salt, and our delicious water from our beautiful hilltop. For the vanilla, we use rich Mexican vanilla beans, sourced from our friends at Picado Mexican, which adds a deep, rounded note that brings the whole thing together.
Use it to brighten pancakes, porridge, fruit salads, ice cream, or cocktails. Stir into sparkling water, make iced tea or milky iced coffee, fold through whipped cream, or brush onto sponge cakes while still warm.
