








Peach BBQ Sauce
The 2025 peach season is here!
At Fat Tomato, we grow two varieties of peaches - Peregrine and Johnny Brack - in our polytunnel, where they arch over the doorways at either end, sheltered from the unpredictable Irish weather.
The Peregrine is one of the finest English peach varieties, long grown in old walled gardens across Ireland and the UK. It produces an abundance of white-fleshed fruit with pale green and crimson skin, and a sweet, floral flavour. These peaches are fleeting - they don’t last long off the tree - so we work quickly to preserve them at their best.
Who doesn’t love a good barbecue sauce? We’ve been refining this one for some time. The natural sweetness of our garden peaches pairs beautifully with tomatoes, warming allspice, and a subtle smokiness from our chilli flake blend. A splash of Highbank Orchard's organic apple syrup adds brightness, while some of Tipperary Watershed Single Malt - aged in first-fill bourbon casks - brings depth and roundness.
Perfect for dipping, marinating, or brushing over grilled meats and vegetables, this sauce is made for summer but one you’ll reach for all year round.

This sweet and tangy peach BBQ sauce can be served with many dishes. It is the perfect consistency as a dipping sauce for chips and a marinade for fish, meats, and vegetables.
When the bottle is nearly empty, we love making sticky chicken wings by adding water to it to extract all that sticky goodness.
