At Fat Tomato, we ferment a SCOBY (Symbiotic Culture of Bacteria and Yeast) with Barry’s Gold Blend black tea, organic raw cane sugar, and filtered well water from our hilltop garden (never chemically treated municipal water) for two weeks. It’s then bottled with flavours from our garden and left to ferment for another week, developing its signature fizz. The result is a vibrant, living drink full of probiotics and antioxidants to support digestion and overall well-being.
We love infusing our kombucha with spicy, fruity, or tart flavours - creating a refreshing, versatile drink perfect any time of day. It’s also a sustainable way to upcycle fruit peelings and other kitchen scraps, turning what would otherwise go to waste into flavourful, eco-friendly beverages.
Please note: Kombucha continues to ferment naturally in the bottle. Open carefully to release the fizz slowly. We never filter or pasteurise, so you may notice small sediments at the bottom - all part of the living, active cultures.
