When your horseradish root cuttings arrive, place them in water for 12–24 hours before planting to rehydrate and encourage strong establishment.
Plant root cuttings in loose, fertile soil free from stones, or in large, deep pots filled with organic peat-free compost. Position each cutting at a slight angle, with the top just below soil level. Horseradish prefers sun or partial shade and benefits from occasional feeding, though it is largely undemanding.
Leaves will emerge quickly, with roots developing steadily underground. Harvest from late autumn onwards, once foliage dies back. Any pieces left in the soil will regrow.

Who doesn’t love horseradish? Fresh horseradish is pungent, peppery, and fiery in all the right ways. Once lifted, scrub the root clean and freeze it whole - then grate straight from frozen, skin on, for maximum flavour.
We love grating it into crème fraîche or yoghurt for a quick sauce, stirring it through mashed potatoes, or pairing it with roast beef, oily fish, or smoked mackerel. It’s also excellent in Bloody Marys, salad dressings, ferments, or classic homemade horseradish sauce.
