Spaghetti squash loves warmth and space. Sow seeds indoors into small pots or modular trays using peat-free organic compost. For best germination, keep temperatures at 20 °C or above. Sow seeds point-side down, about 1.5 cm deep, and keep compost moist but not waterlogged.
Grow plants on in warmth and light, then harden off before planting out once all risk of frost has passed. Plant in full sun, spacing plants 90 cm apart, in fertile, well-drained soil. Water well during dry periods and allow fruits to fully mature on the vine for best storage.
Sow indoors: April to early June
Plant out: Late May to July

Spaghetti squash is a nourishing winter squash, naturally high in fibre and rich in vitamin C and potassium. Roast it whole or halved, scoop out the seeds, and season simply with sea salt. Once cooked, scrape the flesh with a fork to create long, spaghetti-like strands.
The strands take beautifully to olive oil, garlic, fresh herbs like parsley and oregano, or a simple tomato sauce. For something richer, toss with butter and finish with a soft, melt-in-the-mouth cheese such as Kylemore Farmhouse Coolifin. It also works well as a base for baked dishes, pesto, or roasted vegetables.
