  • Delicata squash loves warmth and space. Sow seeds indoors into small pots using peat-free organic compost. For best germination, keep temperatures at 20°C or above and sow seeds point-side down, about 1.5cm deep. Keep compost moist but not waterlogged.

Grow plants on in good light, then harden off and plant out once all risk of frost has passed. Plant in full sun in fertile, well-drained soil, spacing plants 90cm apart. Allow fruits to fully mature on the vine for best flavour and storage.

Sow indoors: April to early June

Plant outdoors: Late May to July

    Harvesting time: September to October

  • Delicata Candystick Dessert is prized for its exceptional sweetness and firm texture, making it ideal for both savoury cooking and baking. Many chefs celebrate it as a standout winter ingredient. Roast wedges or halves, skin-on, with extra-virgin olive oil, garlic, and fresh sage, then serve warm or cold with goat’s cheese, candied nuts, and bitter leaves like radicchio.

The naturally sweet flesh also shines in soups, curries, grain bowls, and baked dishes such as pies, tarts, and cakes. Its rich flavour often means little or no added sugar is needed, making it perfect for dessert-style recipes.
