Asparagus Connover’s Colossal is a classic heirloom variety prized for its large, tender spears and excellent flavour. With a little patience, asparagus is very rewarding to grow from seed. Plants are slow to establish, but once settled, they will produce generous harvests for many years.

Begin harvesting lightly from the third year, and with good care this long-lived perennial can continue cropping for up to 20 years, making it one of the most valuable investments in the kitchen garden.

  • Soak the seeds in water overnight to ensure the best germination. Place 2 to 3 seeds in modular trays with seed peat-free organic compost. Water lightly and leave indoors until the baby spears are approx. 10cm tall. Plant outdoors in a well-drained site, 8cm apart.

    Sow indoors: March to May

    Plant out: Following spring

    Harvesting time: April to June from the third year onwards.

  • Who doesn’t love asparagus? Every year, we cannot wait for the season to kick in, which lasts about eight weeks here in Ireland.

    Fresh asparagus is one of the great joys of the kitchen garden. We love it simply blanched or steamed and finished with butter, olive oil, lemon, and sea salt. It’s excellent roasted, added to risottos, pasta, omelettes, or served with poached eggs or spring lamb.

    The thicker spears of Connover’s Colossal are especially good grilled or roasted, where their flavour really shines.
