At Fat Tomato, we grow over 100 heritage organic tomato varieties each year, in every imaginable colour, size, and shape. Some are best eaten fresh with a pinch of flaky sea salt and a drizzle of good extra virgin olive oil, while others - with their rich, fleshy texture - are perfect for preserving.
After months of nurturing them from seed in February, tomato season is pure joy in our garden. We eat them night, noon, and morning, and always make sure to bottle the best-tasting ones for the year ahead.
These Heritage Tomato Sweets are a taste of the season, preserved in a jar. We slice and dry a mix of our tomatoes at different stages of ripeness, slowly and gently at low temperatures to concentrate their natural sugars and acidity. Some turn out chewy and uber-sweet, others deliciously tangy. Each batch is finished with a sprinkle of Achill Island sea salt to heighten the flavour.
Irresistible on their own, you’ll find yourself eating them like sweets, or try them scattered over salads, pasta, flatbreads, or cheese boards.
