Gooseberries are one of our favourite fruits — tucked away in a quiet corner of the garden, safely out of reach from curious visitors and hungry birds. At Fat Tomato, we grow three varieties: Hinnonmaki Yellow, with its soft, apricot-like sweetness; Hinnonmaki Red, rich and juicy with a deep colour; and Invicta, a sharper green variety that holds its shape beautifully when cooked.
Inspired by traditional Indian amla pickles, this is our Fat Tomato take on a classic — bringing together Irish fruit and warming spice. Made with our gooseberries and Bramley apples, it is layered with toasted organic mustard seed, fenugreek, nigella, cumin, fennel, turmeric, ginger, and smoky black cardamom.
Everything is balanced with our French oak–aged apple cider vinegar, Highbank organic apple syrup, and Wexford sea salt, creating a pickle that is tangy, deeply spiced, and full of character.
Left to mature, the flavours settle and deepen into something bold yet balanced — sharp, savoury, and quietly addictive.
Serve with dahl, curries, grilled halloumi, or smoked fish. It pairs beautifully with sharp cheeses, cold meats, or simply with poppadoms for a spiced Irish twist on a familiar favourite.
