Gooseberries are one of Anthony’s all-time favourites - so much so that he’s tucked the bushes away in a quiet corner of the garden, safely out of sight from curious visitors (and hungry birds). At Fat Tomato, we grow three distinctive varieties: Hinnonmaki Yellow, with its greenish-yellow skin and fragrant, apricot-like flavour; Hinnonmaki Red, which ripens to a deep wine-red and delivers sweet, juicy fruit; and Invicta, a sharp, green variety that holds its shape beautifully when cooked.

Inspired by traditional Indian Amla pickles, this is our Fat Tomato take on a classic - bringing together Irish fruit and global spice. Made with our Hinnonmaki Red and Yellow gooseberries, Bramley apples, fenugreek and nigella seeds, it was created in 2024 and matured for over a year to develop real depth and balance.

Tart gooseberries and Bramley apples are layered with toasted organic yellow mustard seeds, fenugreek, cumin, fennel, turmeric, ginger, and smoky black cardamom. Matured with our French oak-aged apple cider vinegar, Highbank organic apple syrup, and Wexford sea salt, it’s complex, tangy, and full of character.

It is perfect with dahls, curries, grilled halloumi, sharp cheeses, smoked fish, or cold meats, and especially good with poppadoms for a sharp, spiced Irish twist on a familiar favourite.

Definitely worth the wait.

Presented in a wide-neck glass jar, on its own or wrapped in illustrated paper that tells the Wexford and Irish food story, and elegantly packaged in our signature black box.
