Fennel thrives in sunny, well-drained spots with minimal care and can also be grown in deep pots. Sow seeds in a tray or modules with peat-free compost, or direct sow in the final position. To prevent it from going to seed, cut back in June to encourage new growth for autumn.
Sow: March to May / August to September
Plant out: May to October
Harvesting time: February to November

Sweet fennel seeds are used to make a delicious herbal tea that aids digestion and soothes an upset stomach. As a spice, fennel seeds are traditionally used to season fish dishes and are common in Indian cuisine. The fresh herb is aromatic and flavourful, enhancing various dishes, particularly meaty white fish, pork, lamb, and chicken.
We also love making a fennel frond pesto with anchovies, Dijon mustard, and lemon.
