Orchard sweetness comes from raw Irish honey, Highbank organic apple treacle and apple syrup, balanced with heritage apple cider vinegar for brightness and lift.
To build complexity, we add toasted organic spices — star anise, cinnamon, fennel seed, black pepper, chilli, and our garden-grown Sichuan peppercorns — echoing the familiar warmth of traditional hoisin.
Natural umami comes from barley miso, kombu, and dulse seaweed, bringing a subtle coastal depth that roots the sauce firmly in our Irish landscape.
