A deep, velvety, umami-rich sauce inspired by the centuries-old Chinese tradition of hoisin — a savoury-sweet condiment known for bringing balance and depth to roasted meats, vegetables and noodle dishes.

Our Fat Tomato interpretation begins with fresh garden damsons and our own damson umeboshi, layered with yellow onions, fermented garlic, and fresh ginger. Orchard sweetness comes from raw Irish honey, Highbank organic apple treacle and apple syrup, balanced with heritage apple cider vinegar for brightness and lift.

To build complexity, we add toasted organic spices — star anise, cinnamon, fennel seed, black pepper, chilli, and our garden-grown Sichuan peppercorns — echoing the familiar warmth of traditional hoisin.

Natural umami comes from barley miso, kombu, and dulse seaweed, bringing a subtle coastal depth that roots the sauce firmly in our Irish landscape.

Slow-cooked until smooth, glossy, and spoonable, this is a concentrated sauce designed to be used as is or loosened to your taste. The result is damson-forward, savoury, and deeply layered, with warmth, balance, and a clean, lingering finish.

Use as a glaze for roast meats or vegetables, stir through noodles and stir-fries, or tuck into bao buns and sandwiches. Thin slightly with water, stock, or citrus to create a lighter dressing or dipping sauce.

  • Use this Damson Hoisin-Style Sauce anywhere you’d reach for traditional hoisin - and far beyond. Spoon over roast duck, pork belly, or charred aubergine; glaze chicken wings, ribs, or BBQ skewers; or fold into marinades for beef, lamb, or tofu. Toss through stir-fries, noodle bowls, or fried rice for instant depth, or whisk with soy, sesame oil, and vinegar for a bold dipping sauce or dressing.

    It’s beautiful in bao buns with crispy tofu, shredded brisket, or roasted mushrooms, and works surprisingly well with smoked fish or oily fish like mackerel, where the damson, spice, and umami come alive.
