At Fat Tomato, we grow a wide variety of chillies and peppers each year, from fiery favourites to milder varieties, with some crops yielding just enough for our own kitchen. One of our all-time favourites is the Lemon Drop chilli, known for its citrusy kick that we love to incorporate into many dishes.
We grow a range of chillies and peppers including Habanero, Jalapeño, Tequila, Tabasco, Padrón, Poblano, Serrano, Goat Horn, Hankham Horn, Love Apple, Habanada, and Yolo Wonder—to name just a few. These are used for everything from pickling to creating sauces, salsas, and even stuffing and frying them for our family dinners.
Over the years, Anthony has developed a unique blend of chilli pepper flakes, adjusting based on the ripeness and flavours of the harvest. This particular blend comes from the 2024 season. We carefully select chillies that are picked at their peak ripeness, as well as some harvested green to capture those fresh, grassy, and tangy notes.
This year’s blend features a balanced mix of three chillies—Lemon Drop, Red Habanero, and De Cayenne—along with one pepper, the Hankham Horn. The chillies are dried at a low temperature in a dehydrator, then crushed and blended to create a mild yet flavour-packed mix with fruity, earthy, and slightly smoky notes.
A little goes a long way, so if you get a jar, savour it. Due to a smaller-than-usual harvest in 2024 (thanks to a lack of sunlight), we only have a limited number of jars available. Here’s hoping for a better harvest in 2025.
Presented in a 25g glass cork jar, wrapped in illustrated paper that tells the Wexford and Irish food story, and elegantly packaged in our signature black box.
