Is it a jam or a marmalade? This recipe sits somewhere in between — bringing together the depth of three blueberry varieties with mellow pears and bright citrus.

Duke offers a pale colour and a balanced sweet-tart bite; Northblue brings juicy texture and wild-blueberry intensity; while Pink Lemonade adds a delicate rose hue with soft floral citrus notes. These are rounded out by the natural sweetness of Williams’ Bon Chrétien pears, giving the jam a velvety richness. Organic lemons — sourced through the CrowdFarming platform from small Mediterranean growers — add a vibrant, zesty lift.

At Fat Tomato, we grow six varieties of blueberries in our garden, each with its own character. Some are so irresistible they never make it to the kitchen! Thriving in our nutrient-rich, acidic soil and nourished with mulch from our tree trimmings, our blueberries range from sweet to tart and everything in between. Harvest is always a race against the wild birds, who somehow slip past our bird-friendly netting to snatch the ripest berries before we do.

The result is a bright, fruit-forward jam with a marmalade-like edge — lively, layered, and versatile. Spread generously on sourdough toast, brown bread, or warm scones with salted butter. Spoon over yoghurt with granola, ripple through vanilla ice cream, or layer into cakes and desserts. It pairs equally well with creamy cheeses or as a glaze for roast chicken, turkey, or guinea fowl.
